We get the most compliments on our ground beef. It is very lean with a clean taste that will make you wonder what has been in the ground beef you were eating. We suggest you try it for the first time with very little or no seasoning. As one of our first customers put it "it was a sin for me to have made tacos with this beef before I tasted it. It is the best ground beef I have ever tasted." Remember SLOW and LOW if cooking on the grill. You will notice very little shrinkage. If cooking in a skillet you will notice very little fat.
2 lbs Madison Meats ground beef
1 lb Madison Meats sirloin cut in very small pieces
2 medium white onions chopped
1 bell pepper chopped
1 jalapeno seeded and chopped
28 oz diced tomatoes
1 cup brewed coffee
2 cups beef stock (see miscellaneous section)
2 TBS vegetable oil
6 TBS chili powder
3 tsp chipotle powder
1 tsp cayenne pepper
1 tsp cumin
1 1/2 tsp salt
2 TBS tomato paste
15 oz kidney beans drained & rinsed
15 oz pinto beans drained & rinsed
Brown ground beef with salt. Transfer to bowl with slotted spoon. Add vegetable oil to pan over medium heat. Add onions, bell pepper and jalapeno. Cook until softened about 5 minutes. Add cayenne pepper, chili powder and chipotle pepper. Stir for 30 seconds. Add tomato paste and stir for 30 seconds. Return ground beef to pot. Add tomatoes, coffee, beef stock and raw sirloin. Bring to simmer. Reduce heat to low simmer partially covered for 1 hour. Add beans and continue coking partially covered for 30 minutes.
Add your favorite toppings such as shredded cheese, corn chips, chopped red onion, cilantro or sour cream.
